Pan-fried Salmon with Matcha Soba
Usually when you talk about student life, you hear a lot of horror stories about our diets: it’s either really unhealthy or tastes like cardboard. Or, we don’t eat at all! (It’s true; a friend of mine survived a whole weekend on coffee and Red Bull)
When I got my own place with a decent sized kitchen (a miracle in central London), I said, no thank you! I have a budget; but sometimes I like to splurge a little on healthier foods. And this is ridiculously easy to make; perfect for coursework week when my schedule is packed and I need an Omega-3 fatty acid boost for the brain!

My Visit to Urasenke - Kyoto, Japan
Last year for spring break, I traveled with my friend Yoko to the Urasenke School of Chanoyu in Kyoto, Japan, for an introductory lesson in tea ceremony. It was, as I said, very introductory- only brewing was covered- but hey, we were just glad we got the opportunity to visit. These people are secretive- not kidding. The very bottom, right picture that’s sideways was even too much shown, apparently. (I got in trouble from the guard.)
Anywho, thought some people might like to see where the origin of Japanese tea ceremony looks like from the outside. Good luck getting an appointment to see the inside of the tea house- only pupils of the tea master can get in!
Very beautiful, though. If you’re in Kyoto, you should definitely take the time to do this cultural activity. : )

I adore tea. I’ve never drank wine but tea is my closest relation to enjoying the variations and smells and subtle flavors of a drink.
Tea became a daily drink in China around 300AD
The word “tea” was derived from ancient Chinese dialects. Such words as “Tchai,” “”Cha,” and “Tay” were used to describe the tea leaf as well as the beverage. The tea plant’s scientific name is Camellia sinensis (which is from the The aceae family of the Theales order), and it is indigenous to China and parts of India. The tea plant is an evergreen shrub that develops fragrant white, five-petaled flowers, and; it is related to the magnolia. Tea is made from young leaves and leaf buds from the tea tree. Two main varieties are cultivated: C. sinensis sinensis, a Chinese plant with small leaves, and C. sinensis assamica, an Indian plant with large leaves. Hybrids of these two varieties are also cultivated. What we call “herbal tea” is technically not tea because it does not come from the tea plant but consists a mixture of flowers, fruit, herbs or spices from other plants.

Interesting huh? Herbal teas and African Rooibos are not from the Tea tree. And the word “chai” tea is really just a redundancy, for us in the know that is! ;)

MATCHA RICOTTA CUP
Ingredients:
1 tspn Matcha
Honey
Vanilla Extract
Small bowl of ricotta cheese
^^ the above ingredients can be modified to your liking!
So, a snack I love to make is this simple ricotta cheese recipe. The consistency is slightly less chunky than cottage cheese, and the taste is sweet and rich. It is a bit thick though, so small portions are key. Ricotta is a great base to add flavor- it soaks up the sweetness of the honey and vanilla and the matcha is very light. It’s a light, healthy snack (or better yet- I use it as a dessert to cure my sweet tooth)!
For a variation minus Matcha, simply replace it with cinnamon.
Yum~
